Busy day Tomorrow (Monday)
Monday, I will have a job interview for a management position at a restaurant here in Fayetteville, wish me luck. After the interview its down to the ACF Meeting in Bentonville, AR. I am planning on joining the ACF this Monday before I am no longer a student receiving the discount. I will let ya know how the interview went in a later post!

Indian Wedding With Emilie Ausmus
Today, I worked with Emilie Ausmus helping her cater an Indian wedding reception for 200 people at the Fayetteville Towns Center. Me and 4 other hospitality students helped Emilie set-up and and break-down the event.
When we first got there we needed to set up the two rooms the reception was taking place in. This was interesting because I learned some new ways to fold a napkin and properly place a table according to their liking. when the event started we were in charge of making sure all the tables had enough water and no empty or dirty plates in front of them. When they were finished we were told to clean off all the tables and wash the dirty dishes and place them in their proper holding racks. There were a lot of dishes and I don't mind getting dirty so I took the job of the Dishwasher.
I really enjoyed the event and want to thank Emilie for the great experience!

Summer Soul Searchin
This summer I still do not have permanent placement yet this summer, I am still working at different places for Free. I am currently applying for jobs at all the large catering companies as well as local country clubs. Pinnacle Country Club sounds promising and I have a few connections in the community that can hopefully give me a little upper-hand. I have been cooking and smoking a lot of foods lately and the grill is happier then ever!!!

My Placement
I have currently had the misfortune of my restaurant closing down after working there for almost 3 years. I have been searching for the right job to pursue; however, I have not actually worked for $$$. I have been volunteering at different restaurants and hotels in order to gain further knowledge of the different aspects of the hospitality industry and getting to cook in some really cool kitchens also. I will post some blogs and pictures of my experiences soon.

Hello my name is Sean Michael Wetzel…
I will be graduating from the University of Arkansas with a degree in Hotel and Restaurant Management in December of this year. Over the past 4 years I have been very active in the restaurant/hospitality industry working as a cook/chef in different fine dining establishments around Northwest Arkansas. During those 4 years, I also attended and graduated from a 2 year culinary program at the Northwest Arkansas Community College. Since then, I have recently been working as a Chef at Soul Restaurant and Lounge in Fayetteville, Arkansas for the last 2.5 years. Working in the industry has truly helped me perfect my cooking and knife skills and as well as successfully performing inventory and catering mgmt while gaining knowledge of restaurant equipment to better support a great work ethic. While attending college, I am able to obtain a great education while having the ability to play a role in many different school programs, festivals and events. For the Past 4 years, I have devoted myself to learning as much as possible about food, P/L, safety and sanitation, yield mgmt and food and beverage preparation and presentation developing into a great leader as well as gaining wisdom of the hospitality industry and what it entails.
